The four elements: earth, water, fire and air are essential to organic life and the birth of the vine.

The earth here is calcareous clay, underground water is abundant in the soils of Montbrun, and its hot, sunny, Mediterranean climate represents fire.

Lastly air, the winds which sweep throughout the year at Corbières, lower the level of moisture, moderate the amount of sun, ensuring the vineyard excellent, healthy growing conditions without needing excessive treatments.

It is the mission of the Masters of the Wind and the fifth element to use the winds to their best advantage; it is essential in controlling the other elements. Consequently it is the key to developing the soil to its fullest potential and to making the best wines..

In homage to the winds, Eole, god of the winds, has been chosen as the vineyard symbol and guardian. It is under Eole that the greatest care is taken in creating our wines.

Being an Eolier is a state of mind, almost a philosophy because the pleasure of tasting high-class wine is closely tied to its growers? convictions, passion and history.

The Castle of Eoliers is situated in the South of France in the heart of the vineyard of Languedoc, between Corbières and Minervois, in some kilometres of the famous City of Carcassonne.
